MOM'S FAVORITE CASSEROLE!

POPPY SEED CHICKEN CASSEROLE

Ingredients:

4 CUPS COOKED AND CUBED SKINLESS & BONELESS CHICKEN BREASTS.
16 OZ. CONTAINER OF SOUR CREAM
2 CANS CREAM OF CHICKEN SOUP
2 CUPS SHREDDED CHEDDAR CHEESE
1 TO 2 CUPS STEAMED BROCOLLI (OPTIONAL)
2 CUBES OF BUTTER
4 ROLLS OF RITZ CRACKERS
2 TBLS OF POPPY SEEDS
9X13 GLASS CASSEROLE DISH COATED WITH COOKING SPRAY
TIN FOIL TO COVER.

Instructions:

Combine Chicken, brocolli (opt.) sour cream, and cream of chicken soup in large bowl. In a separate bowl, combine popy seeds and gently crushed ritz crackers. Add 2 cubes of melted butter and gently mix together. Combine half of the cracker mix with the chicken mix and pour in the glass baking dish. Cover with shredded cheese. Pour the remaining cracker mix on top to cover completely. Cover with tin foil and bake at 350 degrees for 40 minutes. * Do not mix melted butter with crackers until you are ready to bake. The rest can be prepared ahead of time. *Do not crush the crackers finely (leave chunky). Don't forget the poppy seeds.

THIS DISH IS GREAT SERVED WITH A GREEN SALAD AND ROLLS.
