Easy as Pie!
*MEXICAN FIESTA BISCUIT BAKE*
    * Note:  I got this recipe from a friend of mine.  Her family devours it up.  I am looking forward to trying it myself.  It looks very fast & simple!

1 (1 pound 1.3 oz can) Pillsbury Grand Biscuits, cut into quarters
1 (16-oz) jar thick and chunky salsa.....or your favorite salsa
12 ounces Monterey Jack cheese, grated
1/2 cup chopped green pepper...(optional)
1/2 cup chopped onion...(optional)
2 tablespoons chopped cilantro
1 to 2 cloves garlic, minced
4 chicken breasts, cooked and diced
Heat oven to 375 degrees
Place quartered biscuits in a large bowl.  Add salsa, cheese, green pepper, onion, cilantro, garlic, and chicken.  Mix.  Place mixture in a greased 8-inch square baking pan.  Bake, uncovered, 35 to 40 minutes.   Serves 5-6

We tried this for dinner the other night and LOVED it! It was mighty tasty!! Brad took some for lunch the next day which is always a good sign!~ I did have to cook it a little bit longer because the rolls weren't quite done in the middle...could just be our half working oven too! :-) Thanks for sharing all the great recipes!
